Culinary team to compete in nationals

The SUNY Delhi culinary team is in Orlando this weekend to vie for the title of American Culinary Federation Student Team National Champions.

Mathew Howard, Edward Maley, Leonard Messina, James Russell and Stephanie Wickert of the State University College of Technology at Delhi are one of four teams competing for the national title. The Delhi team qualified to represent the Northeast region at a competition in Niagara Falls. The national competition begins Saturday and will run through Tuesday.

A team from SUNY Delhi won the national title in 2010. The college has won 11 American Culinary Federation state championships and six regional championships.

At the national competition, teams will prepare a four-course signature menu, with 24 portions of each course to be judged at random during service. Teams will have three hours, 20 minutes for prepping and cooking, and 20 minutes per course for plate up.

The Delhi team is coached by Victor Sommo, a 2001 SUNY Delhi graduate and an instructor at the school since 2009.
