ONEONTA -- The Undercover Eggplant again is serving from its menu of specialty sandwiches.
The restaurant closed in January after a fire and re-opened Aug. 7, owners Fred and Karen Falco said Monday. Customers have found out about the re-opening through word of mouth, he said, and business has been good.
The Falcos said they are happy to be open again.
The fire was caused by spontaneous combustion of rags in a clothes dryer, said Fred Falco, who had insurance. Initially, firefighters reported the fire started because of an electrical malfunction in the motor of a freezer chest.
The building at 421 Chestnut St. had roof and interior damage.
About 50 firefighters responded to the call, including 24 from the Oneonta department and others from stations providing mutual aid.
Falco said he did the renovations.
The building was gutted, and the inside was rebuilt, he said, and the ceiling was raised.
Most of the equipment and furnishings are new.
The five employees working for him in January are back on the job, Falco said.
The menu includes selections such as a ham, turkey and bacon sandwich called "The Neahwa" and hot-battered eggplant with ham, mozzarella and fixings called "The Louisiana Locksmith."
Sandwiches cost $7.25 and are served on homemade Italian bread and served with pasta salad.
Paul Scara said he stops at the restaurant during visits to Oneonta. He found the restaurant closed earlier this summer, he said, but Monday he was taking his son, Louis, a sophomore transferring to the State University College at Oneonta, for his first lunch at the Undercover Eggplant.
"I'm very happy that he re-opened," Paul Scara said, "because he has very good food."
